At the historic "Hof im Thal" in Aldein, situated between Montan and Petersberg, you’ll find a surprisingly large yet refined mushroom kingdom! At 1,500 meters above sea level, specially equipped cells cultivate king oyster mushrooms, shiitake, and oyster mushrooms, which do not need to be washed.
"Kirnig"—a term in the local dialect of the Regglberg area meaning steadfast and down-to-earth—perfectly describes the determination needed to establish such a project. Now, South Tyrol's gourmet mushrooms grow at the "Hof im Thal" in a specially adapted barn under the vigilant eyes of these two innovative young farmers.
In 2017, the duo created the conditions at the old "Hof im Thal" to supply the local gastronomy and connoisseurs with delicious mushrooms year-round. It was a bold idea, as there were no comparable endeavors in all of South Tyrol at that time.
