‘People eat meat - most of them, at least. So the least you can do as a farmer is to offer the animals a worthwhile and enjoyable time - even if it's short. It is important to draw attention to conscious consumption and to strengthen regional cycles in the valley. Our goal is good cooperation between agriculture and tourism, which is why we only want to serve high-quality Val d'Ega beef in the participating restaurants.’
